Final Thoughts: We met with Dominic. He is the gym trainer from the Fairmont. This shows how interdisciplinary sustainability is, it takes of all people from different disciplines to move towards a common goal. The hotel has beehives and green roof. There are about 500,000 bees in 6 hives and they have been doing bee keeping for the last 4 years. The harvest is of about 600 pounds of honey per season. They vegetables, herbs, and honey are used by the chef in hotel’s restaurant. They also sell products from the garden and hive. Doing this saves about $50,000 a year.
